A tasty family recipe with chicken, bell peppers, mozzarella and a southwest flare.
Ingredients:
1 1/2 cups prepared baking mix
1/3 cup very hot water
1 cup cut up cooked chicken
1/3 cup salsa
1 cup shredded mozzarella cheese
2 tablespoons chopped onion
1/3 cup bell pepper, cut into thin rings
Directions:
- Move oven rack to the lowest position.
- Heat oven to 350 degrees.
- Grease cookie sheet or 12" pizza pan.
- Mix baking mix and water thoroughly for 20 strokes turning onto floured surface.
- Knead until it is no longer sticky.
- Press into 12" circle on cookie sheet; pinch edge forming 1/2" rim or press in pizza pan.
- Mix chicken and salsa and spread on the crust; sprinkle crust with cheese.
- Bake 12 to 15 minutes or until crust is brown and cheese is bubbly.
