French Carrot Salad

Add a 'je ne sais quois' to your meal featuring freshly grated carrots tossed in a light, tangy vinaigrette of lemon and orange juices with fresh mint and plump currants.
Ingredients:
1 lb carrots, shredded
1/4 cup currants
1/4 cup lemon juice
1/4 cup orange juice
1/3 cup olive oil
3 tbsp fresh mint, chopped
1/2 tsp black pepper
Directions:
  • Combine and toss carrots, mint, and currants. Combine remaining ingredients for dressing, then toss all together. Serve cold.
