Try this healthy main course for your next salmon dinner. Flavors of roasted chiles, pickled green peppercorns, hot pepper sauce and dill prepare the palate for a bite that bites back.
4 green chiles, roasted, peeled, stems and seeds removed, chopped
3 tbsp pickled green peppercorns, drained
1/2 cup dry white wine
1 tsp dried dill
1 tbsp hot pepper sauce
2 tsp scallions, chopped
1 tbsp butter or margarine
2 tsp flour
1/4 cup skim milk
4 salmon steaks
- Saut'e the scallions in butter/margarine for 2 minutes. Add the green peppercorns and continue to saute for an additional 2 minutes. Add the flour and cook for 2 minutes, stirring constantly. Stir in the wine and milk, blending well.
- Add the chiles, pepper sauce and dill. Bring to a boil, reduce the heat and simmer until the sauce has been reduced and thickened.
- Grill or broil the salmon steaks until done.
- Place some of the sauce on a plate, top with salmon, and serve.
