This is what happens when a muffin mix meets a griddle - it's love at first sight. You'll agree they're the best blueberry pancakes ever.
1 package Blueberry Streusel Muffin Mix
1/2 cup all purpose flour
1 large egg
2 cups water
1 tsp baking powder
1 tbsp vegetable oil
- Empty muffin mix into bowl. Break up any lumps. Stir flour, egg, water, baking powder, oil and topping packet into dry mix. Stir until well blended, about 50 strokes. Batter will be slightly lumpy.
- Fold rinsed blueberries gently into batter. Pour 1/4 cup batter onto lightly greased griddle for each pancake.
- Cook until pancake edges begin to dry and bubbles form on top. Turn and cook until golden brown.
