The Best Fall Bread Recipes

The leaves have started to fall, the days are getting shorter and the mornings have begun to roll in with a slight frost. The season of all things pumpkin spiced, the fall is the perfect time to put your Sunbeam® Programmable Bread Maker to good use. There's nothing better than settling in for a cool fall weekend with a fresh-baked loaf of bread ready to be eaten up.

From pumpkin and cranberry, to walnut and pecan, the flavors of fall are perfect for making delicious, wholesome loaves of bread. This season, try out these two delicious recipes:

Banana Walnut Bread
Hearty and perfectly moist, this banana bread recipe gets a great crunch from the walnuts. It's the perfect breakfast to enjoy with your morning coffee or tea. This recipe makes a 2-pound loaf.

Ingredients:

  • 1 cup water
  • 2/3 cup mashed ripe banana
  • 2 tablespoons butter or margarine, softened
  • 2 medium eggs, lightly beaten
  • 4 cups bread flour
  • 4 tablespoons sugar
  • 1 teaspoon salt
  • 3 teaspoons bread machine yeast
  • 2/3 cup chopped walnuts

Directions

  1. Attach the kneading paddle in the bread pan.
  2. In this order, place the ingredients in the bread pan: water, banana, butter, egg, flour, sugar and salt. Note: Make sure liquids go in first, then dry ingredients on top.
  3. Use your finger to make a small indentation on one side of the flour.
  4. Add yeast to the indentation, ensuring that it doesn't touch the liquid ingredients.
  5. Sprinkle nuts onto flour.
  6. Insert the bread pan carefully into the breadmaker and close the lid.
  7. Plug the power cord in and press the Menu button until the "Sweet Bread" program appears.
  8. Press the Color button for the desired crust color.
  9. Press the Loaf button to select the desired size loaf (1.5- or 2-pound loaf).
  10. With the Start button, begin baking.
  11. Use over mitts to remove bread pan from machine.
  12. Let bread cool before removing from pan.
  13. Use a nonstick spatula to gently loosen the sides of the bread from the pan.
  14. Turn bread pan upside down onto a wire cooling rack and gently shake until bread falls out onto rack.
  15. If the kneading paddle comes off in the bread, gently remove it from the bottom of the loaf first.
  16. Leave bread right-side up and cool for about 20 minutes before slicing.

Cranberry Walnut Pumpkin Bread
Two of fall's best flavors, pumpkin and cranberry, combine in this mouth-watering recipe for a tasty loaf that serves best with your afternoon mug of hot chocolate or as after-dinner treat.

Ingredients:

  • 1/2 cup dried sweetened cranberries
  • 1/2 cup chopped pecans
  • 2 large eggs, lightly beaten
  • 6 tablespoons (3/4 stick) unsalted butter, room temperature
  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 cup plus 1 tablespoon sugar
  • 3/4 teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 1 cup canned pure pumpkin
  • 1 teaspoon vanilla extract
  • 2/3 cup buttermilk

Directions

  1. In a bowl, combine the cranberries and pecans and toss with 2 tablespoons of flour. Set aside.
  2. Spray the bread pan and kneading blade with nonstick cooking spray.
  3. Attach the kneading blade in the bread pan.
  4. Place ingredients into the bread pan in the following order: eggs, butter remaining flour, baking powder, baking soda, sugar, salt, pumpkin pie spice, canned pure pumpkin, vanilla extract and buttermilk. Note: Make sure liquids go in first then dry ingredients on top.
  5. Add floured walnuts and cranberries and any remaining flour in the bowl.
  6. Carefully insert bread pan into breadmaker and gently close lid.
  7. Press the Color button for the desired crust color.
  8. Press the Loaf button to select the desired size loaf (1.5- or 2-pound loaf).
  9. With the Start button, begin baking.

Warm, sweet and savory, apple cinnamon bread is a classic fall recipe. You can even pick your own apples at the local orchard to make this tasty loaf.

  • 1/4 cup canola oil
  • 2 large eggs, lightly beaten
  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 2 teaspoons cinnamon
  • 1/2 teaspoon all spice
  • 1/4 teaspoon ground cloves
  • 1/4 cup applesauce
  • 1 teaspoon vanilla
  • 3 teaspoons bread machine yeast
  • 2 cups chopped apples, skin removed

Directions

  1. Attach the kneading paddle in the bread pan.
  2. In this order, place the ingredients in the bread pan: oil, eggs, flour, baking soda, salt, sugar, cinnamon, all spice, ground cloves, applesauce and vanilla. Note: Make sure liquids go in first then dry ingredients on top.
