2 Winter Butternut Squash Panini Recipes

Butternut squash is one of the all-time best winter vegetables and it can be used in an endless number of soups, dinners and recipes. Most notably, this nutty winter squash tastes incredible on a panini and you don't have to find a gourmet cafe to enjoy it. With your Sunbeam® 2-Slice Panini Maker you can create one of these two tasty recipes right in your own kitchen!

Goat Cheese and Butternut Squash Panini
The rich and distinct flavor of goat cheese is the perfect pairing with this warm and sweet squash. This culinary delight is great for a chilly winter day.

Ingredients:

  • 1 medium butternut squash, peeled and diced
  • 3 tablespoons coconut oil
  • 1 tablespoon olive oil
  • Pinch red pepper flakes
  • Pinch of salt
  • 1/2 yellow onion, sliced
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons maple syrup or raw honey
  • 8 slices sprouted grain bread
  • 1/2 cup goat cheese
  • 1 tablespoon fresh chopped parsley
  • 1 tablespoon fresh chopped mint
  • 1 1/2 cup arugula
  • 2 slices bread, your choosing.

Directions

  1. Heat your oven to 425 degrees.
  2. Toss the diced squash with coconut oil, olive oil, pepper flakes and salt.
  3. Place on baking sheet and cook for 15 to 20 minutes.
  4. Meanwhile, heat olive oil in a pan over medium heat and cook the onions for about 7 minutes, until translucent. Add the vinegar and maple syrup and cook until thick.
  5. In a bowl, mix the onions with the cooked squash and combine well.
  6. In a smaller bowl, mix together the parsley, mint and goat cheese.
  7. With the bread of your choosing, smear the bottom slice with the goat cheese blend, topped with arugula and squash mixture.
  8. Top with the remaining slice of bread and place the sandwich in your panini maker.
  9. Cook until melted and enjoy!

Chicken and Butternut Squash Panini
With the addition of shredded chicken and mozzarella, this tasty sandwich is wholesome and filling.

Ingredients:

  • 1 medium butternut squash, peeled and diced
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 2 teaspoons sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon curry powder
  • 1/4 teaspoon cumin
  • 1/2 cup cooked chicken, shredded
  • 2 tablespoons mozzarella, shredded
  • 1/4 cup baby spinach
  • 2 slices bread of your choosing.

Directions

  1. Heat your oven to 425 degrees.
  2. Toss the diced squash with olive oil and a pinch of salt.
  3. Place on baking sheet and cook for 15 to 20 minutes.
  4. Once cooled, combine the squash with sugar, salt, curry powder and cumin. Blend well.
  5. Spread one slice of bread with butternut squash, top with chicken, spinach and mozzarella.
  6. Top with the remaining slice and heat in your panini maker until the cheese is melted and the sandwich is crispy. Enjoy!
