This casserole is great any time. You may use it as an appetizer to help "pad" an otherwise lean mea
Ingredients:
4 eggs
3 cups assorted vegetables: broccoli, spinich, zucchini, or peppers
1 cup prepared baking mix
1/2 cup sliced onion
1/2 cup grated Parmesan cheese
Directions:

Mix all ingredients together in a bowl.

Pour into greased 9x9 casserole.
