1 1/2 cups prepared baking mix
1/3 cup very hot water
1 cup cut up cooked chicken
1/3 cup salsa
1 cup shredded mozzarella cheese
2 tablespoons chopped onion
1/3 cup bell pepper, cut into thin rings
Move oven rack to the lowest position.
Heat oven to 350 degrees.
Grease cookie sheet or 12" pizza pan.
Mix baking mix and water thoroughly for 20 strokes turning onto floured surface.
Knead until it is no longer sticky.
Press into 12" circle on cookie sheet; pinch edge forming 1/2" rim or press in pizza pan.
Mix chicken and salsa and spread on the crust; sprinkle crust with cheese.
Bake 12 to 15 minutes or until crust is brown and cheese is bubbly.
