This is excellent as a hot side dish (without protein), and can be made ahead of time and warmed when needed. If you leave out the egg and protein, it makes an excellent stuffin
Ingredients:
1 cup uncooked white or brown rice
1/4 cup oil
1 large onion, minced
1 to 2 stalks celery, minced
1/2 green pepper, minced
1 small can of mushrooms, drained, or about 4 fresh mushroooms
1 egg
Soy sauce to taste
Directions:

Cook rice according to package directions.

Heat oil and saute onion, celery, and pepper until soft.

Add mushrooms.

Crack egg into bowl and then scramble into sauteed vegetables.

Add cooked rice and about 2 CUPS CHICKEN, BEEF, OR TOFU if desired.

Add soy sauce to rice mix until it is seasoned to your taste.
