Curry Chicken

Combine traditional Indian flavors of clove, cardamom, garam masala, garlic and ginger in a creamy yogurt sauce to make a filling main course. Serve this entrée for dinner and treat your guests to an exotic feast.
Ingredients:
2 lb chicken breast, legs and thighs
16 oz plain yogurt
salt and pepper
2 tsp chili powder
2 medium onion, finely chopped
4 tbsp vegetable oil
4 whole cloves
1/4 tsp whole cardamom
1 tsp cumin powder
2 tsp garam masala*
1 tsp ginger, freshly grated
4 cloves garlic
Directions:
  • Clean chicken well and place in a large baking pan or bowl. Coat liberally with yogurt and season with salt, pepper and chili powder. Marinate for 4 hours refrigerated.
  • Heat oil in a skillet. Add onion and fry for two minutes until golden brown. Add cloves, cardamom, and coriander seeds and lower heat to medium. Add the ginger, garlic, garam masala and cumin powder and another minute, stirring continuously.
  • In a large skillet or dutch oven, add chicken, removing excess yogurt marinade. Spoon onion spice mixture over chicken and cook over high heat uncovered for 5 minutes. Reduce to medium low heat and cook cover covered for 25 minutes or until tender, stir
