Satisfying main dishes don't have to be made with meat! This dish is nutritious and tasty as well as able to be made ahead to blend flavors. If desired it can be used as a hot side dish for an outdoor cookout.
2 16 oz cans of kidney or red beans
1 16oz can of tomatoes
2/3 cup rice
1/2 cup French dressing
1/2 cup chopped green pepper
1/2 cup chopped onion
1/2 teaspoon salt, optional
1/4 teaspoon pepper
Drain beans, reserving 3/4 cup liquid.
Combine beans, reserved liquid, and remaining ingredients and bring to a boil.
Reduce heat and cover.
Simmer 30 minutes or until rice is tender, stirring occasionally.
May be served with grated cheese topping.
