This hearty bean salad with chopped vegetables is a winner at any family gathering.
Variety of colorful canned beans (i.e., was, green, kidney, garbanzo, or pinto); NOTE: do not use French-cut variety of beans
1 cup grated carrots
1 medium chopped onion or 2 tablespoons dried onion; NOTE: a red onion would make the salad even more colorful
1/2 cup chopped parsley
Combine beans, carrots, and onion.
Marinate beans in a closed container. Turn frequently to move liquid throughout mixture.
Stir in chopped parsley at the end.
