Buttermilk Pancakes

Ingredients:
1 cup (250ml) buttermilk
1 egg
1 tbs. sugar
1 cup all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1 tbs. melted butter or margarine
Additional butter or margarine for serving, optional
Maple syrup for serving, optional
Directions:
  • In blender container, place ingredients in order given
  • Cover and process on Blend until mixture is almost smooth. Remove cover, and with rubber spatula, scrape down sides of container. Cover and continue processing until batter is smooth
  • For each pancake, on a hot griddle or skillet, pour about 1/3 cup batter. Cook over medieum-high heat until bubbles appear on surface of pancake. Using a flat metal spatula, carefully turn over pancake and cook until golden brown.
  • Place pancakes on a platter and keep warm. Repeat process with remaining batter. Serve panacakes, if desired, with butter and maple syrup
